It's summertime and the, quintessential wine for the season is 2015 Dry Creek Chenin Blanc. Sourced from the Wilson Ranch of the Clarksburg appellation in the Sacramento Delta, this pure varietal wine is 100 percent fermented in stainless steel to preserve it's bright fruit character. Flavors of ripe citrus; white peaches, bosc pears and honeydew melon, a hint of tangerine, combine with the aroma of fresh cut jasmine flowers to create a luscious, round flavor experience that goes perfectly with the flavors of summer. Try it with sesame chicken, sushi or a fresh Cobb salad loaded, with white corn kernels, avocado and bits of freshly crumbled Applewood bacon. Salmon lightly poached in the wine with fresh thyme or tarragon is another perfect match. Homemade sushi rolls with crab, homemade mayonnaise and avacado (sort of an ad hoc California roll) is another. The possibilities are endless. Also, consider making a summer cocktail with white peaches or pears pureed in a blender with simple syrup reduction, a shot of vodka or gin with a slice of cucumber, lemon or orange over crushed ice and a healthy pour of Dry Creek Dry Chenin Blanc topped with a splash of Prosecco or any sparkling wine. Now that's summer in a glass!
