Mionetto created this luxury cuvee to celebrate its 130th Anniversary. Francesco Mionetto founded the winery in 1887 in the village of Valdobbiadene, the most famous region for Italian sparkling. It has absolutely no residual sugar, making it bone dry, but it is bursting with luscious fruit flavor, white peaches and a hint of citrus with a delicate nose of white flowers. The wine is fermented immediately after harvesting and then allowed to rest on the spent yeast for 3 to 4 months to give it complexity. The wine then undergoes a second fermentation using the Charmat (bulk) method before spending more time resting in the bottle. The resulting finish is elegant and sophisticated.
