Italian Sausage Quesadillas with Spicy Tomato Sauce

INGREDIENTS

extra-virgin olive oil

4 spicy Italian sausages

2 c. tomato sauce

1 garlic clove, grated

1 tbsp. chili powder

3 c. Shredded Monterey Jack

8 small corn tortillas

1/2 c. chopped parsley

1/2 c. crumbled Cotija cheese

DIRECTIONS

Preheat a large skillet over medium-high heat with 1 tablespoon olive oil; prick sausages with a fork and brown on all sides until cooked through, about 5 to 8 minutes. Transfer to a plate to rest for 2 to 3 minutes, cut into 1/4" slices on a diagonal. Set aside.

Meanwhile, in a sauce pan over medium heat warm tomato sauce, garlic, and chili powder. Simmer for 2 minutes and keep warm.

Preheat a large skillet over medium-low heat. Drizzle olive oil and add 1 flour tortilla; fill half the tortilla with handful of Monterey Jack, layer of sliced sausages, more cheese and fold tortilla over to create a half moon. Cook until cheese is melted. Repeat for remaining tortillas.

Top each quesadilla with spicy tomato sauce and crumbled Cotija cheese. Serve immediately.
