Easy Summer Fish Dinners

Crunchy Cod YIELDS: 2 / TOTAL TIME: 25 MINS
2 c. fresh breadcrumbs
2 c. butter
2 tbsp. very finely minced shallot
2 tbsp. finely chopped parsley
Freshly ground pepper
2 large free-range eggs
1 tbsp. horseradish
1 tbsp. whole-wheat flour
1 pinch kosher salt
1/2 c. whole-wheat flour
2 1/2 lb. fresh codfish fillets
Preheat oven to 350 degrees.
Toss the breadcrumbs with the melted butter and place in the oven for 15 minutes. Remove them from the oven and toss with the shallots and the parsley, salt, and ground pepper.
Raise oven temperature to 425 degrees.
Combine the eggs with the horseradish, 1 tablespoon of flour and a pinch of salt.
Place the 1/2 cup of flour in a shallow bowl and dip each piece of fish in the flour, patting off the excess. Next, dip each piece in the egg mixture and then the breadcrumbs, pressing gently to adhere the breadcrumb mixture to the fish.
Place on a piece of parchment paper and bake for 20 minutes.
