INGREDIENTS

1 tbsp. extra-virgin olive oil

1 lb. andouille sausage

1 onion, chopped

1 Green Bell Pepper, chopped

3 ribs celery, chopped

2 garlic cloves, minced

2 tsp. cayenne pepper

2 sprigs fresh thyme

2 tsp. Hot sauce

1 tsp. dried oregano

2 16-oz. cans red beans

kosher salt

Freshly ground black pepper

cooked white rice, for serving

1 tbsp. Sliced green onions, for garnish

DIRECTIONS

  1. In a medium pot over medium heat, heat oil. Cook sausage until slightly browned. Add onion, bell pepper, and celery and cook until slightly softened, about 4 minutes. Add garlic and cook until fragrant. Add cayenne, thyme, hot sauce, oregano and beans and stir until fully incorporated. Simmer for 10 minutes, until beans are fully heated, then season with salt and pepper.

  2. Spoon over rice and garnish with green onions. Serve.
