Carefully crafted under controlled conditions, the grapes are fermented with select yeasts for 8-10 days before being filtered and stored in stainless steel tanks for a second fermentation using the Martinotti-Charmat method. Once the wine has reached the required pressure levels, alcohol, and sugar content, it is cold stabilized, filtered and controlled before bottling.
