A word about Cava, Spain’s Rising Star

Cava is the second most popular sparkling wine in the world, selling 252 million bottles last year alone. Made in the traditional method (‘metodo tradicional’), it produces subtle fruit flavors and tiny ‘string of pearls’ bubbles that fans of love.

Cava is perfect with Spanish Tapas

Made from white grapes that are native to Spain, Macabeo, Xarel.lo, and Parellada, it is characterized by its uniquely zesty flavors, freshness and body often not found in other sparkling wines. That’s why the wine is well suited to pair with Spanish dishes. Cava enhances things like Serano Ham, sardines, olives and hard cheeses like Manchego.

Brut Nature Cava is typically low in sugar, but bursting with floral and mineral notes, which makes it an ideal aperitif. It also goes with food. Spanish Tapas are a typical companion. One popular combination is Pan con tomate con Jamon Serrano-a traditional tapa in Spain with garlic, tomato and olive oil on toasted bread and a slice of Serrano or Iberico Ham on top. Another typical tapa features toasted sardines and piqullo peppers on toasted bread.

The unique character of Dominio De Punctum Brut Nature-$8

Clean, with a bright nose, it begins with notes of white flowers and opens up with luscious flavors of peaches, nectarines, kiwi and hints of Mandarin Orange. Its light body is enhanced by a pleasant creamy texture in the mouth. Tiny white bubbles, like strings of fine pearls dance in the glass, adding to the sense of delight.

Light and flavorful and made from native Macabao and Verdejo grapes, it has only 3 grams of sugar, yet it has a tropical sweetness.

Located in the province of Cuenca near central Spain, Dominio De Punctum is made with extreme care. The wine goes through a secondary fermentation in pressurized fermenters, and then aged ‘on-the-lees’ for two months before bottling to give it added richness.

Versatile Cava pairs with a variety of foods

Vegetarian dishes, light salads and seafood go perfectly with this superbly crafted sparkling wine. Asian dishes, such as Kung Pao Chicken, Vegetable Fried Rice or Shrimp and Vegetable Tempura, Sushi and Sashimi are terrific companions. Enjoy Cava with a meal, dessert, or simply by itself.
