Quick Cranberry Chip Cookies Recipe photo by Taste of Home

Ingredients:

  • 1/2 cup butter, softened
  • 1/2 cup shortening
  • 3/4 cup sugar
  • 3/4 cup packed brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2-1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semisweet chocolate chips
  • 1 cup white baking chips
  • 1 cup dried cranberries
  • 1 cup chopped pecans
Directions:
  1. Preheat oven to 375°. In a large bowl, cream butter, shortening and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking soda and salt; gradually add to the creamed mixture and mix well. Stir in the chips, cranberries and pecans. 
  2. Drop by tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake until golden brown, 9-11 minutes. Cool on pans 2 minutes before removing to wire racks to cool completely.
