Grilled Pork Chops with Spicy Fennel Relish Recipe photo by Taste of Home

Ingredients:

  • 1/2 cup lemon juice, divided
  • 1/2 cup extra virgin olive oil, divided
  • 2 garlic cloves, minced
  • 1-1/2 teaspoons salt, divided
  • 1 teaspoon ground cumin
  • 4 bone-in pork loin chops (1 inch thick and 8 ounces each)
  • 1 medium sweet red pepper, halved
  • 1/2 large onion, cut into 1/2-inch slices
  • 1/2 medium fennel bulb, cut into 1/2-inch slices
  • 1/4 cup coarsely chopped pitted green olives
  • 2 tablespoons chopped fresh basil
  • 1/8 teaspoon crushed red pepper flakes

Directions:

  1. In a shallow dish, combine 1/4 cup lemon juice, 1/4 cup oil, garlic, 1 teaspoon salt and cumin. Add pork; turn to coat. Let stand while preparing vegetables.
  2. Place red peppers, onion and fennel in grill basket; brush with 2 tablespoons oil. Grill, covered, over medium-high heat until lightly charred, 4-5 minutes. Remove to a cutting board and finely chop. In a large bowl, combine vegetables, olives, basil, remaining 1/4 cup lemon juice, remaining 2 tablespoons oil, remaining 1/2 teaspoon salt and red pepper flakes. 
  3. Drain and discard marinade from pork. Grill pork, covered, over medium-high heat until a thermometer reads 145°, 6-8 minutes on each side. Let stand 5 minutes before serving with relish.
