If ever there was a wine to which the term ‘transformer’ could be applied, it is Cabalie 2021, a brilliant red wine from the Languedoc-Roussillon region of France. Sweet and soft, with flavors and smells of ripe red fruit at the beginning, it turns a bit sour in the middle like tart cherries, before rounding the final turn with a bold finish. There’s a lot packed into this wine, that makes its under $15 price a mystery but, whose complaining!
Nicely balanced, the wine drinks just fine on its own, but why not break it out to class up a simple lunch of Brie Burgers, or an Arugula and Mozzarella Pizza, or a creamy Mushroom Risotto.
Hearty sausages reserve a special place of honor beside this rustic blend of 70% Grenache, 20% Syrah and 10% Carignan, which harkens back to the Roman centurions who were the first to make wine in this region.
The grapes are cultivated from 50-year-old wines that yield small volumes of highly concentrated fruit.
With its soft tannins, this wine just loves to be paired with your favorite soft cheese. Venture out from the usual Triple Crème Brie or Camembert to enjoy a delightful Mushroom Brie or Cambozola.

Take an armchair journey with this expressive, complex wine that is an IGP (Indication Geographique Protégé) from the Pays D’OC that truly expresses the flavors of the South of France.
